Biografía

Manuel Coronel was born in Cuenca, Ecuador. He obtained his engineering degree in food industrialization at the UTE University. Master’s degree in nutrition at the Central University of Ecuador and his doctoral degree in Food Science at the University of Extremadura, Spain. 

From 2008 to 2022 he worked at the UTE University. Later, he moved to Ibarra for working at Yachay Tech.

• Preservation technologies and functional foods
